Now firmly under the enterprising and excellent guidance of Nicolas Bru - one of my favourite cooks in Languedoc, Relais Chantovent is coming into its own, with excellent menus, where a deft hand at simple but complex cooking is married with a select sense of taste and panache. Come here to taste the complex, intense red minervois wines, as well as dance with a delicate muscat sec from Barroubia, or other bright rosés, and accomplished whites that Languedoc is proud of.
