Restaurant (Wine) Find of the Month (March 1997)

Once in a while a wine comes along that is superlative. Nick and Clare Bradford of Domaine des Pensées Sauvages, with excellent choice and care have produced a wine that stands on its own, subtle, but rich in flavor. A smooth taste, with sensual raptures of summers in the Corbiéres - full but select. Amazingly only a year old, already has a pedigree that will last from todays tasting till years from now.

The wine and domaine is named as a homage to Claude Lévi-Strauss, (who is a connoisseur and loves the wine). Nick comes from a background of teaching in university on anthropology and still finds time, although sparse, for the work of a vigneron is never-ending and hard, to write and research.

It is well worth the trouble to drive through the dramatic Corbières to visit, buy, and taste their excellent wines.
